I had a TON of blackberries in my backyard this year! They were the bane of my existence all summer as I toiled away trying to dig them out. However, the ones that I didn’t get out eventually flowered and bore fruit. As much as I hate them, I love them. Actually, I still hate them more but I figured I may as well get some sort of a benefit from those evil weeds. So, every night I went out and picked the berries. The ones that I didn’t make into jam went into the freezer. Needless to say, I have more frozen berries than I know what to do with. Just kidding, I am finding plenty of things to do with them!
One really easy thing is to make is blackberry compote. It’s great as a topping for ice cream, cakes, pies, fish and pretty much anything else you can think of!
1 cup fresh or frozen blackberries
2 TBSP granulated white sugar
1 tsp vanilla extract
In medium saucepan combine berries, sugar and vanilla extract. Cook over medium heat until juices begin to run from berries. As the berries begin to soften, lightly smash them. Cook until sugar is dissolved and berries are soft and broken up.
Let cool slightly and serve or serve cold.
